I find most of the time I don't feel like putting in the effort to make a full on dressing recipe with minced garlic and all that so I just add evoo and vinegar to a lil jar (eg for spices) and shake. The clincher is that if I use high quality evoo and vinegar, it still tastes better than a store-bought dressing with all the bells and whistles, so I know when I see dressing in the store that saving time isn't an excuse
Ume plum vinegar!! I love it so much and I've never seen any foodie even mention it before. One thing I love it for is sprinkling just a little on sliced cucumbers (or cabbage), adding a few drops of roasted sesame oil and a shake of black sesame seeds and that's it. Simple and delicious.
You’re so right about store bought dressings, they ALWAYS suck. Anything you make at home is fundamentally better. I bought some ume vinegar a while back based on your rec and I am hooked! I just always be stocked up on it. It adds so much life and zing to any dressing or sauce. Ume vinegar is the thing I grab if my meal is missing something but I can’t figure out what.
Make that two of us!! My (seemingly “healthy”) organic dressing just ruined salads for me, ugh!! One day I threw together a dressing that used white, ume, a little Dijon, and lemon… while I went on a bit of an acid trip, it was heavenly compared to the bottle of garbage in my frig! I’ll never go back! Thank you for the recipes. And I can’t wait to try the sprinkles!
