Hey my darling Pot Heads,
After a minor delay, here are my three new recipes for the holiday season: Thanksgiving Empanadas, Green Chile and Cheese Twice Baked Potatoes, and Pumpkin Pie Bars. I anticipate a lot of us will be celebrating in different ways than we have in the past and these dishes are up for anything. Just want to eat on your couch watching a movie? Great, you can dig into all of these with your hands, no utensils required. Going over to a friend’s house? Great, all of these are easy to travel with and make ahead of time. Staying home alone and want to eat in the bathtub while you smoke a joint? No judgment here and again, these are all handheld. Perfect for a bathtub Thanksgiving for one, or two if you’ve got a good-sized tub.
These dishes should blend easily into any spread whether you’re hosting a traditional holiday meal or something more unique. This year do whatever makes you, the cook, happy. First up, Thanksgiving empanadas. If you don’t feel up for making the dough, I get it. You can absolutely use puff pastry. Don’t skip over the filling though; it’s like a pot pie mixed with the flavors of Thanksgiving. I like to serve them with a side of gravy, like one of these, or some of the Instant Cheese Sauce we made together a few weeks ago.
