I made lasagne yesterday. I had some cento puréed tomatoes and tomato paste, lots of garlic, and lasagne noodles. I made soymilk and from that, a bechamel sauce. I have a few boxes of this pea protein “ground beef” dry mix which is super cheap and an exact sub for ground beef. I made a box, mixed it with Italian sausage herbs (fennel seed, oregano, garlic, hot peppers) and baked it, crumbled it, and added it to the marinara sauce. Added a little water and wine, and fresh basil and oregano. It was divine. It needed something sweet and I had no carrots, which I usually finely grated into the sauce to counter the acid. So I used a sweet chile and tomato jam like thing I got at Aldi. It was perfect.

The lasagne noodles were not the no cook kind. So I had to soften them in boiled water and then add to the pot of boiling water once they would plop into the pot. Assembling was a challenge. My big casserole pans have apparently grown legs and deserted my kitchen. But I cut the lasagne into a size to fit.

Incredibly it was all worth it, yesterday the orange idiot actually started ww3 maybe. I am devastated so was glad for a big prepared meal that will feed us through the week, and a loaf of sourdough bread.

So pasta does in fact, feed us very well.

It is! And making a complicated messy meal of 2 sauces and ginormous noodles requires a lot of meditative movement. Chop this, stir that, focus on each part while doing all the other parts… chanting pasta lasagna marinara bechamel. Garlic. Serrano Chile in the marinara. Yes. Lasagna is the nirvana food.

My mom and family fled fascist Italy from Naples. Nonna would take off her slipper and menacingly hold it above my head if I didn’t finish all my pasta. You did not want a slipper beatdown from that woman! Now I know why she did it. 😂

What a great story. Loved it and your telling of it made me laugh. I watch what is happening in the US with that dead eyed freak show with the tie/bib and I just cannot believe my eyes. Stay safe and eat pasta. The world is watching and we are with you xx

Right!! I still remember my grade 9 and 10 history classes where we had to study about the hours of what Hitler did. I remember sitting at the kitchen table complaining about the homework I had to do. To which my mom who was also a school teacher said, “ stop whining be grateful you’re being taught that and remember without the efforts of our military we’d be standing out in the streets saluting Hitler so shut up and do your homework 😂“! Maga needs this history lesson because I bet many never got far enough in school to get to that part of the history book!! And here we are 🤷‍♂️

I know we live in the age of 1 minute dance videos, (mostly abusive) tweets, and doomscrolling on filtered instagram posts but people need to get back to reading, then reflecting on what they've learned, and then acting on it. No AI is gonna save us and no amount of instagram is gonna make us feel better.
