An idea for Michelle’s chickpea tofu sticks. A rig on what I believe is a Thai dish: cut the chickpea tofu sticks into cubes serve on a bed of spinach and top with Michelle’s peanut butter sauce (satay sauce?). Serve jasmine rice and top everything off with chopped scallions and maybe drizzle with some hot chili oil

Love chickpea flour! I like to use it to make fritters too - any veg that needs to be used up - dice it up and depending on water content in the veggies, add the chickpea flour and maybe a little water or milk or choice... seasonings, form into small patties and pop in the oven or frying pan!

Is barley a staple? I love barley, esp in a soup.

Some of my favorite dishes are made with chickpea flour: Farinata with toppings is a delicious way to appease my pizza cravings (especially since I developed issues with wheat). Southern Indian dosa are literally my favorite breakfast. And I'm sorry of this offends potato lovers but for me, panisse are just much more satisfaying and tastier than fries. So bring it on, Michelle!

Yep I've also made a chickpea flour omelet -- yummy. I'd really love to have quick baked falafel options down. Tofu sticks look amazing!

I made crepes a while ago. Maybe during the pandemic. Also chickpea tofu. It was good but I need more practice.
