I know that last week I said we were going to have one more tofu lesson- and we will- but time is playing tricks on me. The summer solstice just came and went and the Fourth of July is right around the corner. I’ve been playing with my tres leches recipe from last year and wanted to give you guys an update before you’re too deep into the cookout season to handle a new dessert. So the tofu will have to wait for one more week so that you all can fit this cake into your summer plans.
Summer Strawberry Tres Leches has been rattling around in my head for a bit. It’s my wife’s favorite cake but adding strawberries to stuff can be a little tricky. If you’ve ever baked with strawberries, you know that adding fresh strawberries will often turn the resulting baked goods a super fun shade of pinkish grey that’s less than appetizing. A little sugar and citric acid can fix this but to keep this recipe simple, we’re using your favorite strawberry jam. Homemade or store bought is fine. This is dessert after all, we’re not trying to be virtuous.
