Hey Pot Heads,

Yes, we’ve finally reached the last entry of our chickpea flour and naturally, it’s the most decedent. You know I’m not big into frying things but there’s just something about fried chickpea flour fritters that taste both decadent and wholesome. It’s worth trying, particularly if you serve them as a burger. Like all the recipes I’ve shared with chickpea flour, you can mix and match what you add to them based on what you have and what’s in season. Below I’m sharing the recipe with shredded zucchini and dill because those flavors are a constant craving of mine come summertime but should play with the recipe. You can add up to 3 cups of your favorite finely chopped or shredded veggies and switch out the fresh herbs to whatever you’re into. Carrots, cauliflower or broccoli (lightly steamed), shredded sweet potato, corn, sautéed and chopped spinach, and roasted peppers are all great in here.

If you’re pulling stuff out of your pantry you could add artichoke hearts and serve them with some marinara as a fun appetizer at a dinner party. Hearts of palm folded in here and then served with some cocktail sauce would be another fun and easy appetizer. Whatever you pick, just make sure it is quick cooking or that you slightly cook heartier veggies like broccoli or cauliflower so that they’re not raw in the finished bites. That’s the only catch but truly I don’t think you’re going to mess this up. Not sure if your combos make any sense? Send me a dm or reply to this email and I’ll weigh in.

As for the spicing, keep the garlic powder, turmeric, and salt the same but mix it up with the other dried herbs and spices. Chili powder and cumin would be great too. Follow your taste buds, they won’t lead you wrong. I really like dill in here but obviously that doesn’t go with everything. Chives, minced green onions, cilantro, and minced fresh basil would be pretty damn good too. If you’re serving them as fritters, a dipping sauce is strongly encouraged. I’ve attached my tahini cucumber sauce recipe but make whatever sounds good to you. If you decide to make these into burgers—which you absolutely should—use the sauce on the burger buns and then pile on some pickled red onions, fresh tomatoes, and arugula. It’s perfect. Heat up any leftover fritters in your air fryer or oven so they get a little crispy again. It's always worth the extra effort. Now let’s get to cooking.
