If you’ve been following me and my recipes over the years you know that I love a salad. I’m always dreaming up new ways to mix greens, veggies, grains, beans, and pasta into exciting new meals that can be made in advance and eaten cold or at room temperature. It’s one of my favorite kind of meals to have in the fridge waiting for me when I get peckish. Plus it’s always a welcome addition to any potluck or party spread. I have the feeling you have lots of those coming up so let’s dust off our favorite pasta salad bowl because those Easter spreads need an alternative to the oppressive number of deviled eggs everyone will bring. Enter the adorable but delicious: Creamy Carrot Spring Pasta Salad. The best part? Unliked deviled eggs, this food will fill you up and won’t make the dining room smell like a bunch of mayo-based farts. Your tummy and those around you will be grateful.
The star of this recipe is the dressing so feel free to just make that and add it to whatever you fancy. It’s great on a crisp romaine salad, served as a dip, or tossed on a potato salad along with some chopped celery and red onion. I’m serving it here over some pasta, a little protein and sweetness from the freezer, and then tomatoes and fresh herbs. The color is gorgeous, and the edamame helps give the bowl a protein boost to help you look alive during whatever small talk you’ll have to face at the next potluck. Want to make it look even fancier? Buy some carrots with their greens still attached, wash and chop ¼ cup of them to sprinkle over the top right before serving. It’s pretty and makes you seem like a real crunchy kitchen witch which will intimidate all your foes.
