Hey Pot Heads! Welcome back from your day of protesting. I saved some chickpea flour for you. If you aren’t caught up on our chickpea flour discussion, start here. Now it’s time to get cooking. There are three very easy meals you can whip up using a simple chickpea batter that can be endlessly personalized based on what you have at home and what you are in the mood for: a scramble, an omelet/crepe, and a thick pancake.

Before we move on to baking and frying with chickpea flour, I thought I would make a video to go along with the omelette recipe. There are some of you who just won’t try the recipes without more visual guidance and I am hellbent on getting you all to try chickpea flour. It’s too good of a staple for you to be intimidated. I recorded myself making it from start to finish and the entire video was 5 minutes and 24 seconds before I cut it down to make it actually watchable. You don’t want to slowly watch the batter cook right? Right. But that means if you already have your filling and batter ready-which shouldn’t take much time at all- you too can make an omelette for yourself in less than 6 minutes. Just watch.
